Lapu-lapu in Pineapple

Lapu-lapu in pineapple is a filipino food recipe for renal patient, kidney patients.

Ingredients

375 grams lapu-lapu fillet, cut into chunks
155 grams carrot
1 cup all purpose flour
1/2 cup pineapple tidbits
7 cloves garlic, minced
1 egg
3/4 tablespoon cornstarch dissolved in pineapple syrup
1/2 teaspoon pepper
185 ml unsweetened pineapple juice
11 ml calamansi

Procedure

1. Marinate fish in 11 ml tablespoon calamansi and 1/2 teaspoon pepper.
2. Combine flour and garlic. Dredge each piece in flour mixture, coat with egg then fry until light brown.
3. Combine carrots and juice in a sauce pan.
4. Simmer for 5 minutes.
5. Add tidbits and cornstarch.
6. Cook until thick then pour over fish.
7. Serve.
