Dinuguan is a filipino food recipe.
Ingredients
1/2 kilo pork
1/4 kilo pork liver
1 cup pig blood, frozen
1 onion diced
2 cloves garlic, minced
1/2 cup vinegar
1/2 tablespoon patis
1 teaspoon salt
2 teaspoon sugar
1/4 teaspoon oregano
4 jalapeno peppers
cooking oil
Procedure
1. Put pork in saucepan, cover with water. Simmer for 30 minutes.
2. Remove from broth and dice. Set aside 1 and 1/2 cups of broth.
3. Heat oil in a separate saucepan. saute onion and garlic.
4. Add pork, liver, patis and salt.
5. Put vinegar and cover. Let boil, do not stir. Redue heat, simmer uncovered, let most of the liquid evaporate.
6. Add broth, simmer for 10 minutes.
7. Pour pig blood. Add sugar. Cook until the mixture is thick. Stir to prevent it from clotting.
8. Add jalapeno peppers. Add oregano.
9. Serve.
