Arroz Caldo with Chicken

Arroz caldo with chicken is a filipino food recipe recommended for lunch.

Ingredients

1/2 cup rice
1/2 cup malagkit
6 cups water
1 small chicken, cut into pieces
1 inch ginger, sliced into thin pieces
1 onion chopped
2 seegments garlic, chopped
2 tablespoons lard
2 stalks green onion
1 tablespoon patis
hard-boiled eggs

Procedure

1. Saute garlic, ginger and onion
2. Add chicken.
3. Season with patis.
4. Cover and allow to simmer for a few minutes.
5. Add rice, malagkit and water.
6. Stir all ingredients to avoid sticking to the sides.
7. Cook over low heat for 20 minutes.
8. Add green onions.
9. Garnish with hard boiled eggs.
10. Serve.
